Now summer is in full swing in Marbella, we like to eat a lot lighter and simpler food; so for our first recipe of the month we are going with a classic! The Caprese Salad.
This classic salad originated on the island of Capri, off the coast of italy. It is light, fresh, healthy and simplicity itself.
Slice the tomatoes about ½ cm thick and arrange on your serving dish, then rip the mozzerella into about six pieces and throw it on top of the tomatoes; do the same with the basil leaves.
Finally season with salt and pepper and drizzle over the olive oil and balsamic vinegar.
All you need now is a loaf of crusty bread and a cool glass of white wine.
